Makes 4 servings Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 3 - Tablespoons butter
  • 2 - Tablespoons flour
  • 1 - cups milk
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 2 - cups onions, chopped
  • 4 - cups boiling water
  • 3 - cups milk

Directions

  1. In a saucepan, melt butter at a moderate heat. 

  2. Blend in the flour and stir until thick and smooth. 

  3. You want to slowly add in the 1-cup milk. 

  4. Stir constantly as you add in the milk. 

  5. Season the white sauce with the salt and pepper. 

  6. Set aside.

  7. In a stockpot, add water and set heat to medium. 

  8. Bring the water to a boil, add onions, and cook for 10 minutes or until tender. 

  9. Next, add the white sauce and the 3 cups of milk. 

  10. Continue to simmer until you blend the white sauce into the soup.
