Makes 6 servings Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 3 - Tablespoons butter
  • 2 - cups yellow onions, chopped
  • 5 - cups beef broth
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 6 - slices toast
  • 1/2 - cup cheddar cheese, grated

Directions

  1. In a stockpot at medium heat, melt butter and add onions. 

  2. Slowly cook until lightly browned, this may take 30 minutes. 

  3. Add the beef broth. 

  4. Reduce heat to low and add the broth, salt and pepper. 

  5. Simmer for 15 minutes.

  6. In soup bowls, place the toast. 

  7. Ladle in the soup and garnish with cheese.
