Chestnut Soup I

Makes 4 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

Directions

  • Score the chestnuts crosswise and place in pan with cooking oil.  Heat in oven at 300 F. 

  • Shake pan occasionally.  Remove when you can easily remove the shells.

  • In stockpot at moderate heat, melt butter, add the chestnuts, cook slowly but do not brown.  Pour in veal stock and gently cook until chestnuts are tender. 

  • Using a hand blender, blend the stock.  Bring stock to a boil and add the cream, sugar, cayenne pepper and salt.
