Levverknepp (Liver Dumpling Soup) Supp II

Makes 6 to 8 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1 - soup bone
  • 1 - pound stew beef
  • 2 - quarts water
  • 1 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1 - medium yellow onion
  • 2 - stalks celery

Dumplings (Knepp)

  • 1 - pound beef livers, chopped
  • 1/2 - cup yellow onions, chopped
  • 1/2 - cup celery, chopped
  • 1/4 - cup butter
  • 1/4 - cup shortening
  • 1 - cup breadcrumbs
  • 1 - egg, beaten
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper

Directions

  1. In a stockpot at moderate heat, put soup bone, stew beef, and cover with water. 

  2. Add the salt, pepper, onion, celery stalks and cook for 2-1/2 hours and the meat is tender. 

  3. Turn down heat to low and simmer 1 hour.  While simmering, make the dumplings (Knepp).

  4. Dumplings: skin the liver and remove fiber. 

  5. In a saucepan, melt butter and sauté onions and celery until golden, but not brown. 

  6. Add the liver, breadcrumbs, egg, salt, pepper and mix. 

  7. Remove soup bone, onion, and celery from soup. 

  8. Return heat to moderate and get soup to bubble. 

  9. Using a spoon, drop in the dumplings into the soup. 

  10. Cook 8 to 10 minutes and dumplings begin to rise to surface.
