Soup with Dumplings

Makes 6 to 8 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 2 - quarts soup stock
  • 1 - egg, beaten
  • 1/2 - cup flour, sifted
  • 2 - Tablespoons butter
  • 1/2 - teaspoon salt
  • 1/3 - cup milk

Directions

  1. In a stockpot at moderate heat, bring soup stock to a boil. 

  2. To make dumplings, in a mixing bowl, blend egg, flour, and salt.

  3. In a small saucepan, melt butter and add to the flour mixture.

  4. In a small saucepan, slowly heat milk and add to the flour mixture. 

  5. To form the dumplings, you want the mixture soft enough to pick up with a spoon. 

  6. Drop the dumplings into the boiling soup. 

  7. Cover the stockpot and continue to boil for 10 minutes.
