Soup with Egg Balls

Makes 6 to 8 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1 - Tablespoon soft butter
  • 2 - Tablespoons flour, sifted
  • 1 - egg white, beaten
  • 2 - hard-boiled egg yolks
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 2 - quarts soup stock

Directions

  1. In a mixing bowl, blend butter with flour and add egg white. 

  2. Take a fork, crumble egg yolks, and add to the flour mixture. 

  3. Add the salt and pepper to mixture. 

  4. With lightly floured fingers, mold mixture into small balls. 

  5. If too soft, add a little flour, however, you do not want it too stiff. 

  6. In a stockpot at moderate heat, bring soup stock to a boil. 

  7. When soup is bubbling, drop in balls and cook for 5 minutes.
