Split Pea Soup

Makes 6 to 8 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 2 - cups dried split peas
  • 2 - large yellow onions, peeled and sliced
  • 1 - stalk celery, diced
  • 2 - Tablespoons butter
  • 2 - quarts water
  • 4 - Tablespoons breadcrumbs
  • 1 - cup mashed potatoes
  • 1 - teaspoon salt
  • 1/4 - teaspoon pepper

Directions

  1. Wash and soak peas overnight. 

  2. In stockpot at moderate heat, melt butter and brown the onions and celery.   Pour in the water and add the breadcrumbs. 

  3. Drain the peas and add to the soup.  Cook the soup for 1 hour or until peas are soft. 

  4. Take a hand blender and blend soup.  Add the mashed potatoes and bring to a boil.  Add the salt and pepper and serve.
