Apricot Jam
Grandma Showalter's Pennsylvania Dutch Cooking from AlansKitchen.comMakes 6 (6-ounce) jars.

Ingredients

  • 4 - cups apricots
  • 3 - cups sugar
  • 4 - Tablespoons lemon juice
  • 1/8 - teaspoon salt

Directions

  1. Use dried apricots. Heat them in a little water and simmer until tender.
  2. Mash and measure the 4 cups pulp.
  3. In a saucepan at low heat, put apricots, sugar, lemon juice, and salt, stir until you dissolve the sugar.
  4. Increase heat to moderate and bring to a boil, stirring constantly until mixture thickens.
  5. Pour into hot jelly glasses, cool, and seal.
