Bird's-Eye Sauce

Prep Time: 10 min
Cooking Time 20 min

Ingredients:

  • 1/2 - head cabbage, coarsely chopped
  • 1 - quart green tomatoes, coarsely chopped
  • 2 - onions, coarsely chopped
  • 1 - teaspoon celery seed
  • 1 - teaspoon mustard seed
  • 1 - cup sugar
  • 1-1/2 - Tablespoons salt
  • 2 - cups apple cider vinegar
  • 1 - cup water
  • 1/2 - teaspoon ginger
  • 1/2 - teaspoon cloves

Directions:

  1. In a kettle at moderate heat, place the cabbage, tomatoes, and onions.
  2. Add the vinegar, water, ginger and cloves. Bring to a boil.
  3. Reduce heat to low and simmer 20 minutes or until mixture is well cooked and thickened.
  4. Pour into hot sterilized jars and seal.
