SWEET AND SOUR BEETS
Ingredients:
- 2 - cups boiled beets, remove tops
- 4 - cups boiling water
- 1/3 - cup sugar
- 1 - teaspoon all-purpose flour
- 1/2 - teaspoon salt
- 1/3 - cup cider vinegar
- 2 - cloves
- 1 - Tablespoon butter
Directions:
- In a saucepan at moderate heat, place the beets and half-cover with
boiling water.
- Boil for 45 minutes until tender. (Add water if necessary.)
- When done, remove from boiling water and allow cooling and removing
skin.
- In a double boiler, in the top combine the sugar, flour, salt, and
vinegar.
- Stir and blend until smooth. Add cloves and cook until sauce is
clear.
- Add the beats and simmer 30 minutes.
- Remove cloves; add butter, blend, and serve.
