Hot Potato Salad

Ingredients
- 2 - Tablespoons butter

2 - Tablespoons flour

1 - cup milk

1/2 - teaspoon salt

1/4 - teaspoon pepper

6 - cups cooked potatoes, diced

1 - red bell pepper, chopped

1 - green bell pepper, chopped

3/4 - cup celery (with leaves), chopped

1 - cup onions, chopped

1/2 - teaspoon prepared mustard

1 - cup prepared salad dressing (Miracle Whip)

2 - hard-boiled eggs
Directions
- In a large saucepan, whip
together the butter, flour, and milk to make a white
sauce.
- Add in the potatoes and simmer 5
minutes.
- Next, add the peppers, celery,
and onions.
- Cook the mixture for 2 minutes.
- Just before serving in a bowl,
mix the mustard and salad dressing.
- Add to the potato mixture and
toss.
- Garnish with the hard-boiled
eggs.
