Hot Potato Salad
Pennsylvania Dutch Recipes from AlansKitchen.comMakes 6 to 8 servings

Ingredients

  • 2 - Tablespoons butter
  • 2 - Tablespoons flour
  • 1 - cup milk
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 6 - cups cooked potatoes, diced
  • 1 - red bell pepper, chopped
  • 1 - green bell pepper, chopped
  • 3/4 - cup celery (with leaves), chopped
  • 1 - cup onions, chopped
  • 1/2 - teaspoon prepared mustard
  • 1 - cup prepared salad dressing (Miracle Whip)
  • 2 - hard-boiled eggs

Directions

  1. In a large saucepan, whip together the butter, flour, and milk to make a white sauce. 
  2. Add in the potatoes and simmer 5 minutes. 
  3. Next, add the peppers, celery, and onions. 
  4. Cook the mixture for 2 minutes.
  5. Just before serving in a bowl, mix the mustard and salad dressing. 
  6. Add to the potato mixture and toss. 
  7. Garnish with the hard-boiled eggs.
