Potato Cakes

Ingredients
- 12 - strips bacon

3/4 - cup onions, chopped fine

3 - eggs, beaten

4 - cups mashed potatoes

1/2 - cup milk

1/2 - teaspoon salt

1/4 - teaspoon pepper
Directions
- In a skillet at moderate heat, fry
bacon until crispy and drain bacon on paper towel.
- Leave 5
tablespoons of drippings and remove the remaining.
- Sauté onions in
skillet and lightly brown.
- In a bowl, add the eggs, mix with
mashed potatoes, milk, salt, pepper and sautéed onions.
- Shape the
mashed potato mixture into cakes about 3/4-inch thick.
- Lightly brown
the potato cakes in skillet.
- Turn the potato cakes once to brown
other side.
- Cover and steam over low heat for 5 minutes.
- Serve with
the bacon.
