Potato Cakes

Pennsylvania Dutch Recipes from AlansKitchen.comMakes 5 servings

Ingredients

  • 12 - strips bacon
  • 3/4 - cup onions, chopped fine
  • 3 - eggs, beaten
  • 4 - cups mashed potatoes
  • 1/2 - cup milk
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper

Directions

  1. In a skillet at moderate heat, fry bacon until crispy and drain bacon on paper towel. 
  2. Leave 5 tablespoons of drippings and remove the remaining. 
  3. Sauté onions in skillet and lightly brown.
  4. In a bowl, add the eggs, mix with mashed potatoes, milk, salt, pepper and sautéed onions. 
  5. Shape the mashed potato mixture into cakes about 3/4-inch thick. 
  6. Lightly brown the potato cakes in skillet. 
  7. Turn the potato cakes once to brown other side. 
  8. Cover and steam over low heat for 5 minutes. 
  9. Serve with the bacon.
