Pennsylvania Dutch Cooking from AlansKitchen.comGreens with Mustard Dressing

Ingredients

  • Mustard Dressing
    • 2 - Tablespoons sugar
    • 1 - Tablespoon flour
    • 1 - teaspoon dry mustard
    • 1/2 - teaspoon salt
    • 2 - eggs
    • 3/4 - cup milk
    • 1/2 - cup vinegar
    • 1/2 - cup water
  • 1 - pound salad greens

Directions

  1. In a saucepan at low heat, mix the sugar, flour, mustard, and salt. 
  2. Break the eggs into the mixture and thoroughly blend. 
  3. Add milk and stir constantly. 
  4. In a separate saucepan, heat the vinegar and water. 
  5. Pour this into the dressing mixture when it begin to thicken. Stir constantly. 
  6. Cook until thick and pour over greens.
