Greens with Mustard Dressing

  • Mustard Dressing
    •    2  Tablespoons sugar
    •    1  Tablespoon flour
    •    1  teaspoon dry mustard
    • 1/2  teaspoon salt
    •    2  eggs
    • 3/4  cup milk
    • 1/2  cup vinegar
    • 1/2  cup water
  • 1  pound salad greens

Directions

1) In a saucepan at low heat, mix the sugar, flour, mustard, and salt. 

2) Break the eggs into the mixture and thoroughly blend. 

3) Add milk and stir constantly. 

4) In a separate saucepan, heat the vinegar and water. 

5) Pour this into the dressing mixture when it begin to thicken. Stir constantly. 

6) Cook until thick and pour over greens.
