Potato
and Endive Salad
Makes 6 servings
Ingredients:
- 6 - medium potatoes
- 1 - head endive
- 1 - medium onion, chopped
- 1 - stalk celery, chopped
- 3 - cups water
- 2 - Tablespoons sugar
- 2 - Tablespoons vinegar
- 1 - teaspoon salt
- 1 - egg, beaten
- 4 - strips bacon, diced
- 1/2 - cup all-purpose flour
- 1 - hard-boiled egg
Directions:
- Boil potatoes in jackets, peel, and dice. Wash endive,
drain, and cut in small pieces.
- In a bowl, add the endive to the potatoes and add in the
onion and celery.
- In a bowl, combine water, sugar, vinegar, salt, and eggs.
Set the egg mixture aside.
- In a skillet at moderate heat, slowly fry bacon. When
almost done, add flour and stir until blended.
- Pour in egg mixture and stir until thickened. Pour sauce
over potatoes and endive in a bowl, garish with hardboiled
eggs and serve at once.
