County Dandelion Salad
(Endive, lettuce,
poke shoots, or any kind of greens may be substituted for
dandelions.)
Ingredients:
Directions:

Wash and pick over the dandelions,
cut fine.

In a skillet
at moderate heat, dry
bacon until crisp.

In a bowl, beat together the eggs,
sugar, water, and vinegar.

Pour this mixture into the bacon
skillet with the bacon.

Reduce heat to low and stir until
dressing thickens.
-
Then pour over the dandelion
greens.
-
Mix well and garnish with hard-boiled
eggs.
