Chopped BBQ Chicken Salad
Makes 4 serving (about 3-1/2 cups each)

Prep Time: 10 min.
Cooking Time: Up to 10 min.

Ingredients

  • 4 - frozen Grilled Chicken Breast
  • 12 - cups chopped crisp salad greens
  • 1 - cup corn
  • 1/2 - cup shredded Monterey Jack Cheese
  • 1/2 - cup diced tomato
  • 1/2 - cup barbecue sauce
  • 1/2 - cup ranch dressing
  • 16 - large tortilla chips, coarsely broken

Directions

  1. Microwave chicken breast according to package directions; keep warm and set aside.
  2. Place lettuce on plate sprinkle with corn, cheese and tomatoes. 
  3. Cut chicken breast into slices and place on top of salad.
  4. Drizzle barbecue sauce directly over chicken and salad. 
  5. Finish by drizzling dressing over salad only. Garnish with tortilla chips. 
  6. Serve immediately.
