Chopped BBQ Chicken Salad
Makes 4 serving (about 3-1/2 cups each)
Prep Time: 10 min.
Cooking Time: Up to 10 min.
Ingredients
- 4 - frozen Grilled Chicken Breast
- 12 - cups chopped crisp salad
greens
- 1 - cup corn
- 1/2 - cup shredded Monterey Jack
Cheese
- 1/2 - cup diced tomato
- 1/2 - cup barbecue sauce
- 1/2 - cup ranch dressing
- 16 - large tortilla chips,
coarsely broken
Directions
- Microwave chicken breast according
to package directions; keep warm and set aside.
- Place lettuce on plate sprinkle
with corn, cheese and tomatoes.
- Cut chicken breast into slices and
place on top of salad.
- Drizzle barbecue sauce directly
over chicken and salad.
- Finish by drizzling dressing over
salad only. Garnish with tortilla chips.
- Serve immediately.
