Black Bean Texican Salad

Makes 8 servingsSalad

Prep Time: 20 min.
Chilling Time: 1 hrs.

Ingredients

  • Dressing Ingredients
    •    1  Tablespoon honey
    •    1  Tablespoon lime juice
    • 1/2  teaspoon salt
    • 1/2  teaspoon ground cumin
  • Salad Ingredients
    •    1 - cup frozen whole kernel corn, thawed, drained
    •    1 - can (15-ounce) black beans, rinsed, drained
    •    1 - can (4-ounce) chopped mild green chilies, drained
    •    2 - tomatoes, cubed 1/2-inch
    •    2 - Tablespoons chopped fresh cilantro
    •    4 - cups torn iceberg lettuce
    • 1/2 - pound (1-inch thick slice) Deli Jalapeno Cheese or Monterey Jack Cheese, cubed 1/2-inch

Cooking Directions:

  1. In a large bowl, stir together honey, lime juice, salt, and ground cumin.

  2. Add all corn, black beans, chilies, tomatoes, and cilantro. Stir until well coated.

  3. Cover and refrigerate at least 1 hour to blend flavors.

  4. Just before serving, add lettuce and cheese to bean mixture. Toss lightly.
