Cranberry Turkey Mold
Makes 4 servings

Ingredients

• 2 - cups cranberry juice

• 1/4 - cup water

• 1 - package unflavored gelatin

• 2 - teaspoons lemon juice

• 1 - cup celery, diced

• 1/2 - cup apple, peeled and diced

• 1 1/2 - cup cooked turkey, diced

• 1/2 - teaspoon salt

• 2 - teaspoons cooking oil

• 1 - cup  mayonnaise

Directions

1. Put cranberry juice on stove to heat.  Stir gelatin into 1/4 - cup water, then dissolve in hot cranberry juice.  

2. Stir in lemon juice, and cool until partly jelled.

3. Add the celery, apple, turkey and salt.  

4. Turn into a 1-1/2 quart oiled mold.  

5. Chill until set.  

6. Unmold on lettuce and serve with a bowl of mayonnaise.
