Fiesta Corn and Black Bean Salad
Makes 4 to 6 servings.

Ingredients

- can (15-1/4 ounces) corn, drained
1 - can (15 ounces) black beans, rinsed and drained
1/2 - cup sliced green onions
1 - can (14-1/2 ounces) petite cut diced tomatoes with zesty
jalapenos, drained
2 - Tablespoon oil
1/2 - teaspoon ground cumin
Cilantro (garnish)
Lime juice (garnish)
Directions
- In medium bowl, you want to add the corn,
black beans, onions, tomatoes, oil, and cumin.
- Toss.
- Garnish with
cilantro and serve with squeeze of lime juice.
Picnicking
& Tailgating
Place the chilled salad in
a plastic contain and place in your ice chest for storage until getting to
the picnic.
