Fruit Salad Lanai
Makes 6 servings.

Prep Time: 25 min.

Ingredients

1 - fresh pineapple
1 - firm, large banana
1 - orange
1 - pear
Mint sprigs
1/4 - cup chopped chutney
3 - Tablespoon lime juice
2 - Tablespoon red bell pepper, chopped
1 - Tablespoon vegetable oil
2 - teaspoon candied ginger, chopped
1/4 - teaspoon curry powder

Directions

  • Cut your pineapple in half lengthwise through crown. 
  • Then cut fruit from shells with knife leaving shells intact.
  • Then, cut fruit into chunks.
  • Peel and slice banana, section orange.
  • Core and slice pear.
  • Arrange pineapple, banana, orange and pear in pineapple boats.
  • Garnish with mint.
  • The dressing first begins with a bowl or screw-top jar.
  • Then add the chutney, bell pepper, vegetable oil, candied ginger, and curry.
  • You then want to stir together until blended.
  • Serve with salad.

Picnicking & Tailgating

Place the chilled salad in a plastic contain and place in your ice chest for storage until getting to the picnic.
