- 1/3 - cup
coarsely chopped pecans
- 1 - package
(10-ounce) (6 cups) fancy mixed salad
greens
- 1 - large
mango (1-1/2 cups) , peeled, cut into
3/4-inch chunks
- 1 - medium
(1 cup) red bell pepper, cut into 1/8-inch
strips
- 2 - ribs
(3/4 cup) celery, sliced 1/4-inch
Directions
- In a small bowl,
you want to combine vegetable oil, vinegar,
and honey. Mix well and set aside.
- In a 10-inch
skillet, melt butter until sizzling and add
pecans.
- Cook over medium
heat, stirring constantly, for 3 to 4 minutes
or until pecans are golden brown. Remove from
heat.
- In a large bowl,
you want to place pecans, mix salad green,
mango, bell pepper, and celery. Add dressing
and toss to coat well.
