Orange Glazed Grilled
Sausage with Artichoke Salad
Makes 8 servings
Ingredients
- 1/2 - cup orange
juice concentrate thawed
- 1/2 - cup honey
- 1/4 - cup soy
sauce
- 1/2 - Tablespoon
rice wine vinegar
- salt (to taste)
- pepper (to
taste)
- 2 - packages
gourmet sausage
Salad
- 2 - Baby
Artichokes fresh
- 1 - cup Whole
Pecans toasted
- 1 - Orange cut
in half
- 1/4 - cup Red
Onion sliced paper thin
- 2 - Tablespoon
Green Onion chopped
- 1/2 - cup Green
Olives whole
- 1/2 - cup Small,
Black Olives whole
- 2 - Tablespoon
Lemon Zest
- 3 - Tablespoon
Olive Oil
- 2 - Tablespoon
Italian Parsley Leaves
Directions
Preheat grill to
medium-hot fire according to manufacturer’s
directions.
- In a bowl, mix
orange juice concentrate, honey, soy sauce and
rice wine vinegar.
- Season with salt
and pepper.
- Grill the
sausage basting with the orange sauce, coating
all sides until char marks appear.
- Set aside and
keep warm.
Salad
- Break off the
outer leaves of the artichokes and
discard.
- Rub the
artichokes with a slice of lemon to prevent
discoloration.
- Slice the
artichoke hearts paper-thin.
- Juice one half
of the orange and place in a large mixing
bowl.
- Cut off the peel
and pith of the remaining orange half and cut
into thin slices.
- Place in bowl
with remaining ingredients.
- Toss to
combine.
- Place salad
mixture and sausage on serving dish.
