Artichoke &
Turkey Country Salad

Ingredients
- 2 - jars
(6-ounce) marinated artichoke hearts, drained,
reserve marinade
- 2 - Tablespoons
balsamic vinegar
- 1/4 - teaspoon
coarsely ground pepper
- 4 - cups mixed
greens
- 1 - package
(8-ounce) (2 cups) fresh mushrooms, halved
- 8 - ounces
unsliced deli turkey, cubed
- 4 - ounces (1
cup) Mozzarella or Colby Cheese, cubed
1/2-inch
- 2 - medium
tomatoes, cut into wedges
- 2 - Tablespoons
freshly grated Parmesan cheese
Directions
- In a small bowl,
you stir together reserved marinade, vinegar
and pepper.
- In large bowl,
you toss together the mixed greens, mushrooms,
deli turkey, Mozzarella or Colby Cheese,
tomatoes, and Parmesan cheese. You add half of
marinade mixture and toss to coat.
- You want to
serve with remaining marinade mixture.
