Asian Salad with Seafood and Romaine

Salad Recipes from AlansKitchen.comMakes 4 servings (about 2 cups each)

Prep time: 10 min.

Ingredients:

  • Dressing
    • 1/4 - cup Lite Soy Sauce
    • 3 - tablespoons rice vinegar
    • 2 - tablespoons Vegetable Oil
    • 2 - tablespoons granulated sugar
    • 1/2 - teaspoon garlic powder
    • 1/2 - teaspoon toasted sesame oil
    • 1/8 - teaspoon ground red pepper
  • Salad
    • 1 - bag (10 ounces each) hearts of romaine salad blend
    • 4 - ounces fresh snow peas, cut into thin strips (4 oz = about 1 cup)
    • 1/2 - red bell pepper, cut into thin strips 1 inch long
    • 8 - ounces ready-to-eat crabmeat or crab flavored seafood
    • 1 - can (11 ounces each) mandarin oranges, drained
    • 1/2 - cup Chinese Rice Noodles

Directions

  1. Make Dressing: 
    1. Whisk together soy sauce, vinegar, vegetable oil, sugar, garlic powder, sesame oil and pepper in small bowl until well blended.
  2. Make Salad: 
    1. Combine romaine, pea pods and bell pepper in large bowl.
    2. Add half of the dressing; toss lightly.
    3. Place equal amounts of salad onto 4 plates.
    4. Top each evenly with crabmeat, oranges and rice noodles.
    5. Drizzle with the remaining dressing.
    6. Serve immediately.
