Caribbean Pork and Mango
Salad

Prep time: 15 min.
Ingredients:
- 1 - package Lemon Pepper
Pork Roast, cut into 1/2-inch pieces
- 1 - can black beans (15-ounces) rinsed and drained
- 2 - mangos, peeled and
cubed or 1 jar mango (26-ounces) drained and
sliced
- 6 - cups mixed greens
- 1/4 - red onion, halved
and then thinly sliced
- 1/2 - cup fruit-flavored
vinaigrette dressing
Directions
- In a large bowl, combine
pork, black beans, mangos, mixed greens, and
onion.
- Add dressing and gently
toss to blend well.
