Mediterranean Pasta Salad
Makes
4 servings
Prep time: 15 min.
Ingredients:
- 1 - package Lemon Pepper
Pork Roast, cut into thin strips
- 1 - small cucumber, diced
- 1 - cup cherry tomatoes,
halved
- 12 - ounces penne pasta,
cooked and drained
- 6 - ounces feta cheese,
crumbled
- 1/2 - cup fresh mint,
chopped
- 1/2 - cup Greek
vinaigrette dressing
Directions:
- In a large bowl, combine
pork, cucumber, tomatoes, pasta, cheese, and
mint.
- Drizzle dressing over
salad ingredients, tossing gently to coat.
- Refrigerate leftovers.

- Serve in shallow salad
bowls or on dinner plates with foccacia
wedges.
