Tuscan Pork and Bean Salad
Makes
4 servings
Prep time: 15 min.
Ingredients:
- 2 - Fresh Boneless Center
Cut Loin Chops, cooked, cut into 1-inch cubes
- 1 - can (15 1.2-ounces)
Great Northern beans, rinsed and drained
- 2 - tomatoes, ripened and
cubed
- 1/4 - cup green onion,
sliced
- 1 - package (10-ounces)
Mediterranean greens
- 1 - jar (4-ounces)
pimientos
- 1 - can (14-ounces)
artichoke hearts, drained and quartered
- 1/2 - cup Italian salad
dressing
- 1/4 - cup Parmesan
cheese, grated
Directions:
- In shallow serving bowl,
toss together pork chops, beans, tomatoes,
onion, greens, pimientos, artichoke, and salad
dressing
- Portion onto individual
serving plates
- Top each serving with 1
tablespoon cheese.
Alan's Kitchen Tips:
Serve with crispy
breadsticks and assorted cheeses. Refrigerate
leftovers.
