Peach and Peanut Chicken
Salad
Makes
6 servings
Prep time: 15 min.
Ingredients:
- 6 - cups bite-size pieces
salad greens
- 2 - cups cut-up cooked
chicken
- 2 - cups sliced peaches
- 1 - medium stalk celery,
sliced (1/2 cup)
- 2 - medium green onions,
sliced (1/4 cup)
- 1/2 - cup raspberry
vinaigrette
- 1/2 - cup honey-roasted
peanuts, if desired
Directions:
- In large bowl, toss
greens, chicken, peaches, celery, onions, and
vinaigrette.
- Top with peanuts.
Alan's Kitchen Tip:
When fresh peaches are not
in season, you can use frozen peaches (just let
them thaw at room temperature) or canned peaches
that are well drained.
For crisp tossed salads, add
the dressing and toss just before serving.
