Shredded Thai Chicken Salad

Makes 4 servingsSalad

Total Time: 15 min.

Ingredients

Directions

  1. In large bowl, add chicken, carrots, broccoli slaw mix, and green onion. Toss.

  2. In small bowl, add creamy peanut butter, rice vinegar, vegetable oil, honey, soy sauce, and red pepper sauce to make the dressing. Beat with a wire whisk.

  3. Just before serving, drizzle dressing over salad; toss until evenly coated. Garnish with cilantro.

Alanís Kitchen Tips

  • For added color and flavor, sprinkle chopped fresh cilantro on top of the salad.
  • Serve this flavorful salad in lettuce cups. Boston lettuce, Bibb lettuce or radicchio would all work well.
  • Sprinkle with chow mein noodles.
