Feta and Vegetable
Rotini Salad
Makes
8 servings, about 1 cup each
Prep Time: 20 min.
Chilling Time: 1 hr.
Ingredients
- 3 - cups
tricolor rotini pasta, cooked, drained and
cooled
- 1 - cup Crumbled
Feta Cheese
- 1 - cup halved
cherry tomatoes
- 1 - cup chopped
unpeeled cucumber
- 1/2 - cup sliced
black olives
- 1/2 - cup Zesty
Italian Dressing
- 1/4 - cup finely
chopped red onion
Directions
- In a large bowl,
you want to toss, pasta, cheese, tomatoes,
cucumber, black olives, dressing, and red
onion.
- Cover and
refrigerate at least 1 hour to blend flavors.

Tip:
Substitute other vegetables as desired. If cherry
tomatoes are not available, chop a few plum
tomatoes. Or, add chopped red and green pepper in
place of cucumber.
