Bama's Baby Blue
Salad

Ingredients:
Directions:
- You want to
toss greens with Balsamic
Vinaigrette and crumbled blue
cheese. (Place on 6 individual plates.)
- Arrange orange
slices over greens & blue cheese.
- Sprinkle with
strawberries.
- Top with Sweet
& Spicy Pecans.

- 1/2 - cup
balsamic vinegar
- 3 - Tablespoon
Dijon mustard
- 3 - Tablespoon
honey
- 2 - garlic
cloves (minced)
- 2 - small
shallots (minced)
- 1/4 - teaspoon
salt
- 1/4 - teaspoon
pepper
- 1 - cup olive
oil
Directions:
- In a bowl,
whisk together the vinegar, mustard, honey,
garlic, shallots, salt, and pepper.
- Gradually whisk
in olive oil.

Ingredients:
- 1/4 - cup
sugar
- 1 - cup warm
water
- 1 - cup pecan
halves
- 2 -
Tablespoons sugar
- 1 - Tablespoon
chili powder
- 1/8 - teaspoon
ground red pepper
Directions:
- In a mixing
bowl, stir together 1/4-cup sugar and 1-cup
warm water under you dissolve sugar.
- Add pecan
halves and soak for 10 minutes.
- Drain and
discard sugar mixture.
Preheat oven
to 350° F. Lightly grease baking sheet.
- In another
mixing bowl, combine 2-Tablespoons sugar,
chili powder, and red pepper.
- Add pecans and
tossing to coat.
- Place on a
lightly greased baking sheet.
- Bake for 10
minutes, stirring once.
