Salad Recipes from AlansKitchen.comPotato and Endive Salad
Makes 6 servings

Ingredients:

  • 6 - medium potatoes
  • 1 - head endive
  • 1 - medium onion, chopped
  • 1 - stalk celery, chopped
  • 3 - cups water
  • 2 - Tablespoons sugar
  • 2 - Tablespoons vinegar
  • 1 - teaspoon salt
  • 1 - egg, beaten
  • 4 - strips bacon, diced
  • 1/2 - cup all-purpose flour
  • 1 - hard-boiled egg

Directions:

  1. Boil potatoes in jackets, peel, and dice. Wash endive, drain, and cut in small pieces. 
  2. In a bowl, add the endive to the potatoes and add in the onion and celery.
  3. In a bowl, combine water, sugar, vinegar, salt, and eggs. Set the egg mixture aside.
  4. In a skillet at moderate heat, slowly fry bacon. When almost done, add flour and stir until blended. 
  5. Pour in egg mixture and stir until thickened. Pour sauce over potatoes and endive in a bowl, garish with hardboiled eggs and serve at once.
