Mandarin Chicken Salad
Makes 4
servings
Prep Time: 15 minutes
Ingredients:

1 - can (15-1/2 ounces) pineapple chunks in heavy
syrup, un-drained

3 - Tablespoon vegetable oil
-
3 - Tablespoon cider vinegar
-
1 - Tablespoon soy sauce
-
4 - cup iceberg lettuce shredded
-
1 - can (14-1/2 ounces) diced tomatoes, drained

2 - cup cubed cooked chicken
-
1/2 - cup sliced green onions
-
dry Oriental noodles (garnish)
Directions:

Drain the pineapple and reserve 1/4-cup syrup. In
small bowl, combine reserved syrup, oil, vinegar and soy sauce, stir
briskly with fork.

You want to toss lettuce with pineapple,
tomatoes, chicken and green onions in large bowl.

Sprinkle with crumbled dry noodles.
Picnicking &
Tailgating
Cover the salad and keep chilled until you
are ready to picnic or tailgate. Store additional dressing in a jar with a
tight fitting lid to pass separately.
Place the chilled salad in a plastic container and place
in your ice chest for storage until getting to the picnic.
