California Fruit Salad
Makes 4 servings

Ingredients

• 8 - lettuce leaves

• 8 – ripe apricots, halved and pitted

• 2 – oranges, peeled and sliced

• 12 - cooked prunes, drained and pitted

• 1/2 - lemon, juice

• 4 – tablespoons olive oil

Directions

1. Wash and dry lettuce leaves and place onto 4 plates.  

2. Arrange the apricots, oranges, and prunes around the plate.  

3. Sprinkle lemon juice over plates and top with a tablespoon olive oil on each plate.
