Italian Style Artichoke, Tomato and Sausage Salad

SaladMakes 7 servings

Prep Time: 15 min

Ingredients:

  •    1  package Regular Roll Sausage, cooked, crumbled, drained
  •    3  teaspoon Balsamic Vinegar
  •    1  cup White Wine
  •    1  pound Artichoke Hearts, halved
  • 1/2  cup Grape Tomatoes, halved
  • 1/4  cup Parsley, fresh chopped
  •    2  Tablespoon Basil, fresh chopped
  • 3/4  cup Parmesan Cheese, grated
  •    1  teaspoon Salt
  • 1/4  teaspoon Black Pepper, ground

Directions:

1) Begin by heating 2-Tablespoon olive oil in a saute pan and add cooked sausage, balsamic vinegar and white wine.

2) Cook for 1 minute. Remove sausage from saute pan and place into a bowl.

3) Add the artichoke hearts, grape tomatoes, parsley, basil and parmesan cheese.

4) Add the salt & pepper and stir well.
