Ghost Ranch Corn - Pecan Dip

Prep Time: 15 min.

Ingredients

  • 2 - package (8 ounces) cream cheese, soft
  • 1/4 - cup lime juice
  • 1 - Tablespoon ground cumin
  • 1 - Tablespoon red chiles
  • 1/2 - teaspoon salt
  • 1/8 - teaspoon pepper
  • 1/4 - cup vegetable oil
  • 1 - can (16 ounce) whole-kernel corn, drained
  • 1 - cup pecans, chopped
  • 1 small onion, diced

Directions

  1. In my electric mixer, add the cream cheese, lime juice, cumin, red chiles, salt, pepper, and oil. 
  2. At medium speed, mix until mixture is smooth. 
  3. Next, stir in the corn, pecans, and onion. 
  4. Finally, pour into a serving bowl and serve with tortilla chips.

Picnicking & Tailgating

You want to place in a plastic container and keep in ice chest.  At the picnic or tailgate site, allow everyone to dip.
