Ghost Ranch Corn - Pecan Dip
Makes 4 cups serving

Ingredients
- 2 - package (8 ounces) cream cheese, soft

1/4 - cup lime juice

1 - Tablespoon ground cumin

1 - Tablespoon red chiles

1/2 - teaspoon salt

1/8 - teaspoon pepper

1/4 - cup vegetable oil

1 - can (16 ounce) whole-kernel corn, drained

1 - cup pecans, chopped

1 small onion, diced
Directions

In my electric mixer, add the cream cheese,
lime juice, cumin, red chiles, salt, pepper, and oil.

At medium speed, mix
until mixture is smooth.

Next, stir in the corn, pecans, and onion.

Finally,
pour into a serving bowl and serve with tortilla chips.
