Paxton Green Tomato Relish
Makes 2 quarts.
Ingredients
2
- quarts green tomatoes,
chopped fine

small cabbage, chopped
fine

medium onions, chopped

green bell peppers, chopped

- cup salt

tablespoons mustard
seed

tablespoons celery
seed

- cup sugar
2
- cups vinegar
1

tablespoon dry mustard
Directions

Place
the tomatoes, cabbage, onions, and peppers, in a large bowl.

Sprinkle with salt.

Cover
and place in refrigerator overnight.

Drain,
add mustard seed and celery seed, sugar and vinegar.
(Reserve 1 tablespoon of the vinegar.)

Place
ingredients in a large saucepan, bring to a boil and simmer 30 minutes.

Keep the ingredients boiling, add the dry mustard and the 1
tablespoon of vinegar.

Either
cool and place in a container to refrigerate or place in sterilized jars and
seal.
Picnicking
&
Tailgating:
Just place jar into ice chest. At the picnic or
tailgate site, open and pour into a paper or plastic bowl. Goes great
on hot dogs, hamburgers, but not apple pie.
