Paxton Green Tomato Relish
Makes 2 quarts.

Ingredients

2 - quarts green tomatoes, chopped fine

1 - small cabbage, chopped fine

6 - medium onions, chopped fine

12 - green bell peppers, chopped fine

1/4 - cup salt

3 - tablespoons mustard seed

2 - tablespoons celery seed

1 - cup sugar

2 - cups vinegar

1 - tablespoon dry mustard

Directions
  • Place the tomatoes, cabbage, onions, and peppers, in a large bowl.  

  • Sprinkle with salt.  

  • Cover and place in refrigerator overnight.

  • Drain, add mustard seed and celery seed, sugar and vinegar.  (Reserve 1 tablespoon of the vinegar.)

  • Place ingredients in a large saucepan, bring to a boil and simmer 30 minutes.  

  • Keep the ingredients boiling, add the dry mustard and the 1 tablespoon of vinegar.

  • Either cool and place in a container to refrigerate or place in sterilized jars and seal.

Picnicking & Tailgating:  

Just place jar into ice chest.  At the picnic or tailgate site, open and pour into a paper or plastic bowl.  Goes great on hot dogs, hamburgers, but not apple pie.
