Cranberry Orange Relish
Makes 24 (1/4-cup) servings

Prep Time: 20 min.
Chilling Time: 2 hrs

Ingredients

  • 1 - orange
  • 4 - cups fresh or frozen cranberries, thawed
  • 2/3 - cup sugar
  • 1/4 - cup chopped pecans
  • 2 - Tablespoons chopped crystallized ginger

Directions

  1. Peel orange and reserve fruit for other use. Cut peel into 1-inch pieces.
  2. Place peel in food processor bowl fitted with metal blade.
  3. Cover and process on high for about 15 seconds or until peel is finely ground.
  4. Add half of cranberries and process slightly.
  5. Add remaining cranberries; process until coarsely chopped.
  6. Place cranberry mixture in large bowl and stir in sugar, pecans and ginger.
  7. Cover and refrigerate for 2 hours and flavors are blended.

Alan’s Kitchen Tip:
A blender or grinder can be used in place of food processor.
