relish is a cooked or pickled
sauce, usually made with vegetables or fruits, generally used as a
condiment. It can be smooth or chunky, sweet or savory, hot or mild.
Thus, chutneys and pickles may both
be considered relishes.
Relish can be mixed with mayonnaise
to make tartar sauce.
A famous relish is the Gentleman's
Relish, which was invented in 1828 by John Osborn and contains
spiced anchovy.
It is traditionally spread sparingly atop unsalted butter
on thin, hot toast.
