Grilled Frisco Beef Subs
with Roasted Vegetable Relish

Ingredients
- 1 - medium red, yellow
or green bell pepper, cut into thin strips
- 1 - medium onion, cut
lengthwise into then wedges
- 1 - Tablespoon olive
oil
- 1 - Tablespoon
balsamic vinegar
- 1/2 - teaspoon dried
rosemary leaves, crushed
- 1/4 - teaspoon pepper
- 1-1/2 - pounds beef
tri-tip or sirloin roast
- 2 - Tablespoon
mayonnaise
- 1-2 - cloves garlic,
crushed
- salt and pepper, to
taste
- 6 - sourdough rolls
(4-5 inches long), split
Directions
Preheat oven to
450°F. Lightly spray 15x10-inch jelly roll pan with
cooking spray.
- Place bell peppers and
onion in pan.
- In a mixing bowl, add
oil, vinegar, rosemary and pepper. Drizzle over
vegetables, tossing to coat.
- Roast in oven 15-17
minutes or until vegetables are tender, stirring
occasionally.
- Meanwhile, in a small
bowl, combine mayonnaise and garlic.
- Trim fat from beef.
Place on grid over medium coals.
- Grill approximately
20-25 minutes, to desired doneness, 140°F for
medium-rare.
- Let stand 10 minutes
before carving into thin strips.
- Season with salt and
pepper, if desired.
- Spread mayonnaise
mixture on bottom half of rolls.
- Arrange beef over
mayonnaise; top with vegetable relish.
