Grilled Frisco Beef Subs with Roasted Vegetable RelishGrilled Frisco Beef Subs with Roasted Vegetable Relish
Makes 6 servings

Prep Time: 15 minutes
Cooking Time: 30 minutes

Ingredients

  • 1 - medium red, yellow or green bell pepper, cut into thin strips
  • 1 - medium onion, cut lengthwise into then wedges
  • 1 - Tablespoon olive oil
  • 1 - Tablespoon balsamic vinegar
  • 1/2 - teaspoon dried rosemary leaves, crushed
  • 1/4 - teaspoon pepper
  • 1-1/2 - pounds beef tri-tip or sirloin roast
  • 2 - Tablespoon mayonnaise
  • 1-2 - cloves garlic, crushed
  • salt and pepper, to taste
  • 6 - sourdough rolls (4-5 inches long), split

Directions

Preheat oven to 450°F. Lightly spray 15x10-inch jelly roll pan with cooking spray.

  1. Place bell peppers and onion in pan.
  2. In a mixing bowl, add oil, vinegar, rosemary and pepper. Drizzle over vegetables, tossing to coat.
  3. Roast in oven 15-17 minutes or until vegetables are tender, stirring occasionally.
  4. Meanwhile, in a small bowl, combine mayonnaise and garlic.
  5. Trim fat from beef. Place on grid over medium coals.
  6. Grill approximately 20-25 minutes, to desired doneness, 140°F for medium-rare.
  7. Let stand 10 minutes before carving into thin strips.
  8. Season with salt and pepper, if desired.
  9. Spread mayonnaise mixture on bottom half of rolls.
  10. Arrange beef over mayonnaise; top with vegetable relish.
