Weekend Breakfast Burritos
Weekend Breakfast BurritosMakes 6 servings

Prep Time: 25 min.
Baking Time: 15 min.

Ingredients:

  • 1 - Tablespoon margarine or butter
  • 8 - eggs, beaten
  • 1/4 - teaspoon pepper
  • 2 - cups diced Canadian bacon
  • 6 - (8-inch) flour tortillas
  • 6 - ounces (1 1/2 cups) shredded Cheddar cheese

Direction:

Preheat oven to 400°F.

  1. Melt margarine in large skillet over medium-high heat.
  2. Add eggs, pepper and bacon; cook and stir about 5 minutes or until eggs are firm but moist.
  3. Spoon egg mixture evenly onto each tortilla.
  4. Top each with 1 tablespoon cheese. Roll up tortillas tightly.
  5. Place, seam side down, in ungreased 13x9-inch (3-quart) baking dish.
  6. Sprinkle remaining cheese over tortillas.
  7. Bake for 10 to 15 minutes or until cheese is melted.
  8. If desired, serve with sour cream and salsa.
