Curried-Raisin Chicken Salad

Makes 4 sandwiches

Ingredients
- 6 - ounces cooked
chicken, diced (about 1 cup)
- 1/4 - cup chopped
celery
- 1/4 - cup real or
light mayonnaise
- 2 - Tablespoons
chopped toasted walnuts
- 2 - Tablespoons
raisins
- 2 - Tablespoons
chutney
- 1/2 - teaspoon curry
powder
- 4 - Cinnamon Raisin
English Muffins, split and toasted
Baby spinach leaves
Directions
- In a medium mixing
bowl, add chicken, celery, mayonnaise, walnuts,
raisins, chutney and curry powder. Lightly mix.
- Line bottom English
muffin halves with spinach.
- Top with chicken
mixture.
- Cover with remaining
muffin halves.
Picnicking or
Tailgating
You
want to wrap each sandwich in plastic wrap, place in a plastic container
and keep in ice chest. At the
picnic or tailgate site, take out of ice chest just before serving.
