Napa Valley Chicken
Salad Sandwiches

Ingredients:

3/4 - cup mayonnaise

1 - teaspoon chopped fresh rosemary (optional)

1/4 - teaspoon salt
-
1/8 - teaspoon ground black pepper

4 - cups cut-up cooked chicken
(about 1-1/2 lbs.)

3/4 - cup halved seedless red grapes

1/2 - cup coarsely chopped walnuts, toasted (optional)

1 - loaf peasant or sour dough
bread, sliced

Arugula or
lettuce leaves
(optional)
Directions:

In a large bowl, combine
mayonnaise, rosemary, salt and pepper.

Add chicken, grapes and walnuts. Toss to coat. Chill, if desired.

To serve, assemble into
sandwiches with arugula.
