Napa Valley Chicken
Salad Sandwiches

Ingredients:
- 3/4 - cup mayonnaise
- 1 - teaspoon chopped fresh
rosemary (optional)
- 1/4 - teaspoon salt
- 1/8 - teaspoon ground black
pepper
- 4 - cups cut-up cooked chicken
(about 1-1/2 lbs.)
- 3/4 - cup halved seedless red
grapes
- 1/2 - cup coarsely chopped
walnuts, toasted (optional)
- 1 - loaf peasant or sour dough
bread, sliced
- Arugula or lettuce leaves
(optional)
Directions:
- In a large bowl, combine
mayonnaise, rosemary, salt and pepper.
- Add chicken, grapes and walnuts.
- Toss to coat. Chill, if desired.
- To serve, assemble into
sandwiches with arugula.
