Cucumber Chicken Salad Sandwich

Makes 4 servings

Ingredients

• 1 - cup chicken breast, cooked & diced

• 1/2 - cup cucumber

• 1/2 - cup mayonnaise

• 2 - teaspoons lemon juice

• 1/4 - teaspoon salt

• 1/8 - teaspoon pepper

• 8 - slices Italian bread

Directions

1. In a mixing bowl, add the chicken, cucumber, mayonnaise, lemon juice, salt and pepper. Toast gently until thoroughly mixed. 

2. Using a spoon or scoop, spread the chicken salad on the bread.

3. Place the other slice of Italian bread on top. Using a sharp knife cut the bread in half and place on plate and serve.

Picnicking or Tailgating

You want to wrap each sandwich in plastic wrap, place in a plastic container and keep in ice chest.  At the picnic or tailgate site, take out of ice chest just before serving.
