Dijon
Chicken Salad Sandwich
Makes 4 serving

- 2 - cups cooked chicken, chopped

3/4 - cup celery, chopped

1/4 - cup mayonnaise

2 - Tablespoons Dijon mustard

1 - Tablespoon lemon juice

Dash ground black pepper

4 - lettuce leaves

8 - slices rye bread
Directions
- In a medium mixing bowl, add
chicken, celery, mayo, mustard, lemon juice and
pepper.
- Mix until well blended.
- Place 1 lettuce leaf on each of
4 bread slices.
- Cover evenly with the chicken
salad; top with remaining bread slices.
Picnicking or
Tailgating
You
want to wrap each sandwich in plastic wrap, place in a plastic container
and keep in ice chest. At the
picnic or tailgate site, take out of ice chest just before serving.
