Fiesta Chicken Salad Taco

Makes 4 servings
Prep Time: 5 minutes

Ingredients

• 2 - cups cooked chicken, chopped
• 1/2 - cup thick 'n chunky salsa
• 1/2 - cup cheddar cheese
• 1/4 - cup mayonnaise
• 8 - taco shells
• 1/2 - cup romaine lettuce, shredded
• 1/2 - cup tomatoes, chopped

Directions

1. In small bowl, add chicken, salsa, cheese and mayo. Mix.
2. Spoon mixture into taco shells.
3. Add lettuce and tomatoes. Serve.

Picnicking or Tailgating

You want to wrap each sandwich in plastic wrap, place in a plastic container and keep in ice chest.  At the picnic or tailgate site, take out of ice chest just before serving.
