Simple Bacon and Tomato Grilled Cheese

Prep Time: 15 min
Cooking Time: 10 min

Ingredients:

  • 8 - slices whole wheat or multi-grain bread
  • 4 - Tablespoons butter, softened
  • 8 - slices (3/4-ounce) Deli American Cheese
  • 8 - thin slices tomato, patted dry
  • 12 to 16 - spinach leaves, if desired*
  • 8 - slices crisply cooked bacon

Directions:

  1. Spread 1 side of each bread slice with 1/2 tablespoon butter.  To make sandwiches, layer 1 slice cheese, 2 slices tomato, 2 slices bacon, 3 to 4 spinach leaves and 1 slice cheese onto each of 4 slices bread, buttered-side down.

  2. Top with remaining bread slices, buttered-side up.  Heat 10-inch skillet over medium heat.

  3. Place 1 sandwich into skillet.  Cook for 8 to 10 minutes, turning once, until golden brown and cheese is melted.  Repeat with remaining sandwiches.

*Substitute fresh basil leaves.
