Mini Deli Lunch Pocket Biscuits

Ingredients
Biscuit
- 1-3/4 - cups flour
- 1/2 - teaspoon salt
- 2 - teaspoons baking powder
- 1/2 - teaspoon baking soda
- 1/4 - cup butter, softened
- 1/2 - cup Ranch dressing
- 1/4 - cup milk
Sandwich Filling
- 1 - cup chopped turkey, ham,
salami, chicken or roast beef
- 1/2 - cup shredded cheese
- 3 - Tablespoons Ranch dressing
Directions
Preheat oven to 350°F. Line
muffin tin with paper liners.
Biscuits
- In a bowl, whisk together
flour, salt, baking powder and baking soda.
- Blend in butter until mixture
resembles coarse meal.
- Stir in Ranch and milk.
- Drop a heaping tablespoon of
biscuit mixture into each muffin cup, filling only halfway.
- Press the biscuit mixture
flat.
- Reserve extra mixture.
Sandwich Filling
- For sandwich filling, combine
meat, cheese and Ranch.
- Spoon filling over biscuit
mixture; top with a spoonful of remaining biscuit mixture
and bake 25 minutes.
