First and Ten Sauté
Makes
4 to 6 sandwiches

Cooking time: 20 min.
Ingredients:

1 - medium onion, sliced
-
1 - clove garlic, minced
-
1/2 - medium green pepper, sliced
julienne
-
1/2 - medium red pepper, sliced
julienne
-
1/2 - medium yellow pepper, sliced
julienne
-
1 - Tablespoon Cajun blackening
seasoning
-
1/4 - cup vegetable oil
-
4 - Tablespoon butter or margarine,
softened
-
5 - hoagie rolls, split
-
1 - package (5-6 links) Smoked Sausage
Links (any variety)
Directions:

In a bowl, combine onion, garlic, green
pepper, red pepper, yellow pepper, seasoning, and oil. Toss
to coat.

Spread 1/2 of butter evenly on the
split side of each hoagie roll. In a skillet over medium
heat, toast the rolls until golden. Set aside.

In the same skillet, over medium heat,
melt remaining butter. Add vegetable mix and toss to coat.

Place links on top of vegetables in
skillet and heat for 15 to 20 minutes, turning the mixture
frequently.

Once heated through, remove links from
skillet and place on toasted rolls.

Top with sautéed vegetables and serve.
