Lunchbox Surprise Sandwich

Makes 1 (2 sandwiches) serving Lunchbox Surprise Sandwich

Prep Time: 15 min.

Ingredients:

  • 2 - slices sandwich bread

  • 2 - teaspoons softened cream cheese

  • 1 - slices (1/2-ounce) deli turkey or ham

  • 1 - slice (3/4-ounce) Deli American Cheese

  • Fresh spinach leaves or leaf lettuce

  • 1 - carrot (at least 9 inches long), peeled

Directions:

  1. Flatten bread slices with rolling pin to about 1/8 inch thickness. Trim crusts with serrated knife.  Spread 1 side of each slice flattened bread with about 1 teaspoon cream cheese.  Top 1 slice with turkey and cheese. Top with remaining bread slice, cream cheese-side down. Press sandwich to flatten.

  2. With a sharp knife, cut sandwich into 4 quarters.  Stack to make 2 sandwiches.  Press down slightly.

  3. Cut 4 long carrot ribbons with vegetable peeler.  Wrap each sandwich with 2 carrot peels, crossing seams underneath sandwich to hold in place.  Wrap in plastic food wrap. Refrigerate.

Alanís Kitchen Tip:
- Use your favorite flavored cream cheese such as onion & chive to add flavor to these little sandwiches.
- To make carrot ribbons, lay peeled carrot on flat surface. Press peeler firmly across length of carrot.
